Ecology’s Source jars have been designed especially for at-home-preserving and can be re-used as many times as you can think of things to fill them with.

So, if you’re ready to dive into the world of preserving, we’ve put together a handy step by step guide to help you on the journey.

Preserving Method

• Wash empty jars in hot, soapy water and rinse well by hand. Keep jars hot until ready to be filled.
• Prepare your preserve or jam according to your favourite recipe.
• Pour preserve or jam into still warm jar, leaving a 2.5cm space from the top of the jar.
• Remove air bubbles by inserting a non-metallic spoon or spatula between the jar and food, turning the jar slowly and moving spatula up and down to allow bubbles to escape.
• Thoroughly clean the jar rim before putting on the lid.
• Screw lid on firmly, but don’t use excessive force.
• Load jars upright into large pot ensuring they are not touching each other. The pot needs to be large enough to allow for the jars to be completely submerged in water.
• Jars must not sit directly on the bottom of the pot. Place a cake rack, the base of a spring-form cake tin or even a hand towel into the pot and sit the jars on this.
• Pour warm water into the pot, completely covering jars by at least 25mm.
• Turn heat on and bring to a boil. Put lid on pot and keep boiling on gentle boil for time indicated in recipe.
• Once boiling time is reached, turn off heat, remove lid from pot and allow jars to cool until safe to touch. Remove from pot and place on a towel. At this point it is recommended not to move the jars again for at least 12 hours to ensure a good seal.
• As jars cool, the pop-top button on the lid should pull down and seal. Once this occurs, your jar is sealed and ready to be stored once completely cool.
• Label jars with the contents and date, and store in a cool, dry, dark place.

Tips and Hints

• To keep jars and lids warm until use, wash just before needed and keep them upright in a sink filled with hot water. Use a towel or tongs to handle them. Hot liquid into cold glass can cause glass to break.

• Where sterilised jars are required, wash as normal then place right side up in large pot (ensure the jars are not sitting directly on base of pot). Fill with water, completely submerging jars. Bring water to the boil and boil for 10 minutes. Keep jars in hot water until ready to fill them, and then remove one at a time, drain and dry prior to use.

• Once filled, keep jars upright at all times. Tilting the jar could cause the food to spill into the sealing area of the lid.

• When removing jars from the pot, take care not to pick them up from the lid. Dry carefully without pushing on or twisting the lid.

• Place jars on a towel to cool so as not to damage benchtops.

• The food level and liquid volume of jars will be noticeably lower after cooling.

• When storing, do not stack jars on top of each other, and try to avoid knocking them against each other. A dent in the lid could compromise the vacuum seal.

• Homemade preserves make wonderful gifts. Secure a piece of decorative fabric around the lid with string or ribbon and add a homemade label to the front.

Ecology's Source jars are only suitable for use with the Boiling Water Bath method. The Boiling Water Bath method is only suitable for high acid foods such as fruits and tomatoes. It is not suitable for vegetables or meats.
