Quick and Easy Baked Recipes You Can Make for Mother’s Day

Mother’s Day is fast approaching! If you’re looking to treat mum to some home cooked foods, then don’t look any further than our quick and easy baked recipes. Whether it’s breakfast, lunch or dinner, you’ll want something that’s quick and easy to make. Here’s three recipes that taste delicious and won’t require the usual lineup of pots and pans. Simply assemble, pop into the oven and set a timer, whilst you go and pamper your mum!

Shakshouka (serves 2-3)


Shakshouka is a Middle Eastern and North African dish traditionally served up for breakfast or brunch. This recipe is super easy to make and always impresses on the table at breakfast. The sauce can also be made ahead of time, simply ensure it is warm before adding your eggs and baking.

Ingredients:
1 Tbsp Olive Oil
½ Onion
½ red capsicum
2 cloves garlic
1 tbps tomato paste
½ teaspoon ground cumin
½ teaspoon smoked paprika
Salt
Chilli flakes (to your liking)
Ground pepper (to your liking)
1/2 can crushed tomatoes
3 large eggs
½ cup crumbled feta
Parsley
Toast, to serve.

Method:
Preheat oven to 190C
Fry the onion and red capsicum in olive oil in a pan. Add the garlic and spices and fry until fragrant. Add the tomato paste and crushed tomatoes. Let the mixture come to a simmer until it boils down to a thick sauce. Add salt, pepper and chilli flakes to your liking.
Pour the sauce mixture into your baking dish, we’re using the Ecology Signature Square Baker. Use a spoon to make 3 holes where your eggs will sit. You may need to spoon some sauce to cover the whites of your eggs. Transfer to the oven and bake for 15-20 minutes depending on how you like your yolks.
Carefully remove from the oven and top with crumbled feta and parsley to garnish. Serve with toast or crusty bread.

French Toast Casserole (serves 3-4)

This recipe is French Toast made easy. No dipping or flipping required, but you’ll still get the warm and fluffy French Toast that everyone loves! This recipe can also be prepared overnight. Simply assemble, cover and place it in the fridge. In the morning, pop it in the oven and set a timer! You can choose to serve this recipe with seasonal fruits and maple syrup.

Ingredients:
¼ Cup butter, melted
½ cup brown sugar
½ loaf of bread
3 large eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Method:

Preheat your oven to 175C
Grease your baking dish, we’re using the Ecology Signature Square Baker 32cm.
Combine ¼ cup brown sugar with 1 teaspoon cinnamon and set aside.
Combine ¼ cup brown sugar and butter spread into the base of the baking dish.
Arrange 1 layer of bread over this butter and sugar layer.
Mix eggs, milk and vanilla in a jug. Pour some over the first layer to let the bread soak.
Sprinkle some of the brown sugar and cinnamon mix on top.
Repeat layers of bread, egg custard mix and cinnamon sugar mix until your baking dish is full.
Bake for 25 minutes or until the top is golden and the custard is set.

Baked Feta Pasta (serves 3-4)

Also known as the TikTok Pasta, this recipe is one of the easiest and most delicious pasta recipes to make! Again, simply assemble, bake, and mix! A great idea for an easy dinner with little washing up.

Ingredients:
2 punnets of cherry tomatoes
½ cup olive oil
Salt and pepper
Chilli flakes
1 block feta
250g (dry) pasta of choice, cooked and drained.
Herbs of choice for garnish

Method:
Preheat oven to 200C.
In a medium baking dish (we’re using the Ecology Signature Casserole 2L dish) combine the cherry tomatoes and tomatoes, garlic and olive oil. Season with salt, pepper and chilli flakes., to your liking.
Add the block of feta to the center of the ingredients and top with olive oil.. Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.
Remove from the oven and combine ingredients with a fork. This is now your pasta sauce, simply add your cooked pasta! Tip: Always reserve some of the pasta water to add to your sauce to make it extra lush and creamy! .
Garnish, serve and enjoy!
