Coconut Bliss Balls by @elleshungry on the Ottawa Orchid Plate

Elle from @elleshungry
has created this beautiful and healthy recipe that will look fantastic served on your new Ecology plates!

Reach for one of these healthy coconut and peanut butter bliss balls to satisfy your sweet tooth. Full of nutrients and healthy fats, these bliss balls do not disappoint! This recipe contains no artificial ingredients, or processed and refined sweeteners and flours. You can also swap sweeteners and nut butters to cater for any dietary requirements.

Ingredients:

  • ¼ cup honey (or an equivalent sweetener if you’re going for a vegan version. Maple syrup or rice syrup will work)
  • ½ cup peanut butter (smooth or crunchy, or another nut butter of your choice could work)
  • 1 tablespoon cacao powder
  • 1 cup desiccated coconut plus extra for topping
Method:

  • Place honey and nut butter into a bowl and mix to combine. You may have to slightly warm up your mixture if it’s a cold day
  • Add the cacao powder and mix through until combined.
  • Add the coconut and mix very well until combined.
  • Roll spoonfuls of the mixture into bite-sized balls. This recipe should make 10 large ones or 15 small ones.
  • Place in the fridge for 30 minutes or longer until set.
  • Serve them up on your favourite Ecology plates or Ecology serveware. Keep them in the fridge or freezer to prevent them from going soft.
